1. Product Introduction
Wood Ear, Wood Ear Mushroom, Dried Wood Ear, Saonde

What is 300g of Wood Ear Mushrooms?

Wood ear mushrooms are dried wood ear mushrooms that have been harvested, sun-dried initially, and then undergo a final drying process at low temperatures to preserve their nutritional content. Because their Vitamin D levels surge as they are dried under the sun, we ensure they are always sun-dried. "300g of Wood Ear Mushrooms" is the product name for a 300g vinyl-packaged portion. Here is a brief introduction to wood ear mushrooms.

Wood Ear Mushroom

There are 28 species of wood ear mushrooms, with 9 species belonging to the genus Auricularia. Among these, the Wood Ear and Hairy Wood Ear are the most famous. The name "Wood Ear" (in Korean, Mogi) comes from the fact that its shape resembles a human ear, combining the Chinese characters for "wood" (木) and "ear" (耳) with the Korean word for "mushroom" (버섯). In pure Korean, it is called Heureuregi. There is also a white variety called the White Wood Ear (Snow Fungus), but it does not belong to the Auricularia genus botanically.

Wood ear mushrooms are brown when growing on wood, but turn black once harvested and dried, which is why they are also commonly referred to as "Black Wood Ear." Hairy wood ear mushrooms get their name from the fine hairs on the outer surface. These mushrooms are commonly found in Chinese cuisine, such as Japchae, Jjamppong, and Tangsuyuk. The photo below shows a single wood ear mushroom, which may remind you of a human ear.

Characteristics of Wood Ear Mushrooms

As you can see in the photo above, wood ear mushrooms consist of gelatinous tissue, making them soft and elastic when fresh. Once dried, they shrink drastically and turn hard. However, when placed in water, they absorb the liquid and return to their original, soft, fresh state. These are the only mushrooms that require exposure to sunlight to grow, making them exceptionally rich in nutrients that other mushrooms lack, while also offering a mild and excellent taste.

As artificial cultivation is not easy, only about 5% of the annual domestic consumption of 10,000 to 12,000 tons is produced in Korea. There are not many countries globally that produce wood ear mushrooms; they are primarily produced in Korea, China, Japan, the Philippines, and Thailand, with China being the largest producer.

Wood ear mushrooms are a favorite edible mushroom for the Chinese, used as ingredients in various dishes such as porridges, soups, and stir-fries, and they are also widely used in Korean cuisine. Beyond their use as food, they have been used in traditional medicine for ages, and they were listed under the name Mogi (literally "tree mushroom" in pure Korean) in the Dongui Bogam (1613), a medical book published during the Joseon Dynasty.

Composition of Wood Ear Mushrooms

The general nutritional analysis table for wood ear mushrooms is as follows. "Dry basis" refers to the content ratio calculated excluding moisture.

General Analysis Table of Wood Ear Mushrooms (Rural Development Administration, Dry Basis)

The general nutritional profile of wood ear mushrooms is characterized by an overwhelming amount of dietary fiber. They also contain 21 types of free amino acids, 6 types of fatty acids including ergosterol, as well as minerals, vitamins, free sugars, mushroom sugars, and beta-glucan. Below are some of the key, unique, and trace components of wood ear mushrooms.

The supplier of this product is Natural Farming Association (Representative: Kim Ju-il) based in Gyeongsan, Gyeongbuk, and the producers are residents of the Taebaeksan mountain region. Founded in 1997, our association specializes in cultivating, processing, and selling mushrooms, and in 2007 we succeeded in becoming the first in Korea to artificially cultivate wood ear mushrooms. We obtained Korean patents (No. 10-0806484) and Japanese patents (No. 4624432) for our freeze-drying method in 2008 and 2010, respectively, and began exporting mushroom products to Japan and Asia in 2012.

Using our patented techniques, the Natural Farming Association produces Oxygen Shiitake Mushrooms—dried mushrooms with properties almost identical to fresh ones. Oxygen Shiitake Mushrooms are unique in that they retain the tenderness, aroma, and flavor of fresh mushrooms while having a reduced weight and extended shelf life.

The Natural Farming Association produces and processes 48 items including shiitake, wood ear, oyster, button, king trumpet, and enoki mushrooms using eco-friendly farming methods and supplies them to Nonghyup Mart, Lotte Mart, Hanaro Mart, Lotte Super, and Lotte Shopping. Additionally, we procure ingredients like Snow Fungus (imported) or Rock Ear mushrooms (produced in other regions of Korea) to package and distribute domestically.
