Snow Fungus/White Wood Ear Mushroom

Jelly Mushroom/White Wood Ear Mushroom/Silver Ear Mushroom/Dried Silver Ear Mushroom/Dried White Wood Ear Mushroom

1. Product Introduction
Silver Ear Mushroom, White Wood Ear Mushroom, White Jelly Mushroom, Saonde

What is Silver Ear Mushroom?

Silver ear mushroom refers to dried silver ear mushroom, which is fresh silver ear mushroom that has been dried and packaged. When you soak the dried mushroom in water for about 20-30 minutes, it fully reverts to its fresh form with the same texture, making dried mushrooms more convenient than fresh ones in terms of storage and cooking. Fresh white silver ear mushrooms turn yellow when dried, but they return to their white, fresh state when placed in water, as you can see in the photo above. Here is a brief introduction to the silver ear mushroom.

Silver Ear Mushroom (White Wood Ear Mushroom)

Silver ear mushroom is a type of wood ear mushroom that is white, hence it is called white wood ear mushroom. Wood ear mushrooms are named for their resemblance to the human ear when growing on trees. "Mok-i" (木耳) is a Sino-Korean term where 'Mok' (木) means tree and 'i' (耳) means ear; "Eun-i" (銀耳) means 'Eun' (銀) (silver) and 'i' (耳) (ear). Wood ear mushrooms come in various colors, including black, yellow, pinkish-red, and white.

In the West, because its appearance resembles white jelly, it is also called the "white jelly mushroom." Due to its white color, its nicknames, in addition to the white wood ear mentioned earlier, include white wood ear, "baek-mok-i," white wood ear mushroom, and "seol-i" (雪耳).

Wood ear mushroom varieties are broadly classified into white wood ear, black wood ear, and red wood ear, and there are a total of 28 sub-varieties. Among these 28 types, the most prized is the white wood ear mushroom. The mushroom we commonly see in japchae is known as black wood ear mushroom because of its dark color when dried. In the market, black wood ear mushroom is usually simply referred to as wood ear mushroom.

White Wood Ear, Black Wood Ear, and Rock Ear

Another mushroom with the suffix "i" (耳=ear) is "seok-i" (石耳), which means "ear that grows on rocks." While white and black wood ear mushrooms grow on trees, the rock ear grows on rocks. All three types resemble ears when attached to trees or rocks, and they feel like human earlobes when touched. However, once dried, this resemblance is less apparent. The photo below shows dried white wood ear, wood ear (black wood ear), and rock ear mushrooms.

Comparison of white wood ear, wood ear, and rock ear

Silver ear mushroom is a specialty product of China, with its main production areas being southern regions such as Sichuan, Yunnan, Fujian, Zhejiang, Guangdong, and Hainan, though it is also found in Shaanxi, Gansu, Inner Mongolia, and Tibet. Gutian County in Fujian Province is the primary production hub. Natural silver ear mushrooms are rare even within China, so with increasing demand, cultivation has become active recently. Since silver ear mushrooms are not found in the wild in Korea, most of them are imported. A very small number of farmers in Korea produce them, but the volume is so low that the price is very high.

Silver ear mushroom is very famous in soup or porridge dishes prepared with various ingredients, and it has been used for health purposes in addition to food since ancient times.

Characteristics of Silver Ear Mushroom

As you can see in the photo above, fresh silver ear mushroom is jelly-like, soft, and elastic. When dried, its weight drops to less than 1/10 of its original state. However, when dried silver ear mushroom is placed in water, it absorbs it, increasing its weight by more than 10 times as it expands back to its original state. A key feature of the silver ear mushroom is its high water absorption capacity. Due to this moisture-adsorbing property, silver ear mushrooms can retain moisture for a long time, and moisturizing cosmetics utilizing these properties have been developed and sold.

If you consume dried silver ear mushroom in powder or pill form, it may cause a bloated feeling as the powder absorbs moisture and expands inside the body.

Historical Figures Who Enjoyed Silver Ear Mushroom

Considering that Empress Dowager Lü of the Han Dynasty (2,200 years ago), Yang Guifei of the Tang Dynasty, and Empress Dowager Cixi of the late Qing Dynasty enjoyed silver ear mushroom, you can get an idea of why it is so famous in China.

Components of Silver Ear Mushroom

Here is the general analysis table of silver ear mushroom components published in the Taiwan Journal of Agricultural and Food Chemistry, which we consider the most precise data available. "Dry matter basis" refers to the content ratio calculated excluding moisture.

General analysis table of silver ear mushroom components (Taiwan Journal of Agricultural and Food Chemistry - 2002, dry matter basis, moisture 11.63%)

Component Protein Lipid NFE Dietary Fiber Ash
Soluble Insoluble
Content (%) 9 2 11 7 65 6

As you can see from the table above, a notable characteristic of silver ear mushroom is its high content of insoluble dietary fiber. Here is a brief introduction to some of the important, unique, and trace components contained in silver ear mushroom.

1). Silver ear mushroom is rich in insoluble dietary fiber.

Silver ear mushroom contains very high amounts of insoluble dietary fiber, nearing that of wood ear mushrooms. "Insoluble" refers to the property of not dissolving in water. Silver ear mushroom is a food rich in dietary fiber.

2). Silver ear mushroom is rich in ergosterol.

Ergosterol is a lipid that converts to Vitamin D in the body.

3). Silver ear mushroom is very rich in Vitamin D.

Vitamin D is a substance that helps with bone formation and calcium absorption. Silver ear mushroom is a food rich in Vitamin D.

4). Silver ear mushroom contains collagen.

When you simmer silver ear mushroom in water for three to four hours, a viscous liquid is released.

5). Silver ear mushroom contains saponin.
7). Silver ear mushroom contains a mushroom sugar called trehalose.

When you chew dried silver ear mushroom, you can taste a slightly savory and sweet flavor. The savory taste is due to amino acids like glutamic acid, and the sweet taste is due to this mushroom sugar. Trehalose plays a major role when dried silver ear mushroom absorbs water to return to its fresh state.

2. Product Features
1). Because it is imported from China, the country of origin, it is very affordable compared to domestic products. Since silver ear mushrooms are cultivated by inoculating mushroom spawn onto wood, there is no difference in quality between Chinese and domestic products. This is because they are not affected by soil conditions while growing.
2). This is an officially imported product that has passed various inspections for harmful substances by the Ministry of Food and Drug Safety during customs clearance, so it is safe.
3). The zipper bag packaging prevents moisture and is very convenient for long-term storage. Simply take out the amount of mushrooms you need and close the zipper to keep moisture out, maintaining a crisp state for a long time. As long as the zipper bag is sealed tightly, it can be stored in a cool, well-ventilated room for years without spoiling.
4). Snow fungus is a food that is very rich in dietary fiber and vitamin D.
5). Snow fungus is used as an ingredient in high-end cuisine due to its excellent taste, aroma, and appearance.

5. Consumption and Storage Methods
1). Snow fungus can be used in various dishes just like any other mushroom. Soak the dried mushrooms in water for about 20-30 minutes to restore them to their fresh state. They can be torn easily by hand. Use them in dishes such as tea, sashimi, salads, japchae, stir-fries, braised chicken, grilled dishes, stews, shabu-shabu, soups, and porridge. They have a crunchy texture and a mild flavor.
2). You can also grind the snow fungus into a powder. If you want a very fine powder, take them to a mill to be lightly roasted and then ground. It is recommended to take 2-3 teaspoons of the powder at a time with milk.
3). You can also make infused liquor with the snow fungus. When infused in a clear container, the mushrooms maintain their shape, making them excellent for decoration. Please note that the dried snow fungus expands significantly, so be sure to use a large container.
4). To make snow fungus skin toner, boil 1 dried snow fungus in 2 liters of water with a lemon over medium heat for 2-3 hours. Once cool, strain the thickened water into a bottle and refrigerate; you can then apply it to your skin. Use the leftover mushrooms from straining in dishes like porridge.
5). Snow fungus can be stored at room temperature, and freezing is recommended for long-term storage. However, as long as the zipper bag is sealed properly, you can use it for years without deterioration without needing to freeze it.
